Cut from the ribs (6-12), this steak is cut between the bones, making it a great option for two people, or one really hungry one. It has a high fat content making for a delicious steak, and is well known for making great roasts. Cooked right, steaks aged this way will just melt in your mouth and give you an intense flavorful bite every time.
